Burdock Root Pickles


2-3 medium sized Burdock Roots sliced thin

3 cloves of garlic chopped

4 fresh ginger sliced thin

Apple Cider Vinegar

Tamari


Boil Burdock Root in water to 2-3 minutes until soft. Remove from heat. Remove Burdock Root with a slotted spoon and put into bowl and reserve the cooking liquid. Add the ginger and garlic to the burdock and mix well. Divide mixture into 2 or 3 mason jars filling them from one inch to the top. In each jar, fill ¼ of volume with Apple Cider Vinegar, 1 tsp of Tamari and the cooking liquid. Refrigerate and enjoy!!
