When ground, chia seeds can be used as a binding agent in place of eggs, making them useful for vegans and vegetarians. When they are allowed to sit in water, they form a gelatinous outer layer, making it potentially useful as a mild laxative. They are thought to be rich in omegas, calcium, and protein, which might be why they are said to be used by Mayans runners for long journeys.
