A plant common to our area, recognizable by its bright purple flowers. Chicory root has been used in much the same way as dandelion root, except it is considered to be more helpful in building the blood. Traditionally, it was used to stimulate the liver, promote bile production, and help with digestion. Roasted chicory can be used as a coffee replacement.
