We offer these seeds for sprouting (checkout our sprouting screens as well). The sprouts have a more delicate and sweet flavor than the grown plant while providing some nutrition. Sprouts also add some crunchy texture to salads and sandwiches. Alfalfa sprouts are said to have a high concentration of vitamin k and calcium, so they could be a good addition to smoothies as well.
